1516943 Jellies F M C CORP 12 Feb 1976 [28 March 1975] 05646/76 Heading A2B Jelly for use in bakery products, which is spreadable and resistant to heat without syneresis comprises a gelling agent e.g. pectin and/or starch, flavouring, food acid and water, and 0.1-3.0% of finely divided water insoluble organic particles containing 85-95% #-1, 4-glucan and 5-15% sodium carboxymethyl cellulose having a degree of substitution of 0.75Œ0.15. The jelly may also contain up to 10% fruit e.g. raspberries. An example also contains sucrose, colourings, caramel, sodium benzoate, corn syrup and citric acid. |
