1515689 Heat coagulable protein MILES LABORATORIES Inc 22 Dec 1975 [23 Dec 1974] 52418/75 Heading C3H A process for producing an aqueous protein product coagulable by heat to produce a gel and having the appearance of a viscous fluid comprises (a) forming an aqueous slurry of an aleaginous seed material, the slurry having a pH 5À1 to 5À9; (b) separating the liquid from the solids portion of the slurry and (c) recovering the protein product from the separated liquid, the temperature during the steps (a), (b) and (c) being maintained at below 75‹ C. In an example defatted soy flour and Na2SO3 were suspended in water at 40‹ C. and the pH adjusted to 5À5 with HaPO4. The mixture was stirred for 30 mins. to extract soluble proteins and carbohydrates and then separation was effected by centrifugation. Proteins and carbohydrates were separated from the supernatant by adjusting the pH to 4À5 with H3PO4. The precipitated protein was a viscous liquid containing proteins of molecular weight from 20,000 to 300,000 and higher.
