<p>Skim milk-free milk substitute for mammals, esp. for rearing calves, consists of a whey powder depleted of 20-55 (30-40)% of its cations and having a reduced lactose content. The milk substitute contains, by wt., w.r.t. dry wt., 13 (7-12)% ash, >17 (17-19)% protein, >9% fat and 5% water; has pH 4.5 to 4, measured in 10% aq. soln., Ca/P-ratio 1.2:1 to 2:1 and also contains an organic acid as preservative. The milk substitute is nutritious, rich in whey protein and can be kept several days without perishing. Feeding stress, caused by base excess, is prevented. Changes in protein, taste deterioration or losses of expensive additives are avoided.</p> |
