摘要 <p>The bread dough testing device is used to measure the visco-elastic properties of the dough, to checkt that the flour used provides a dough of required consistency with out sticking to the tools of the kneading machine. The dough is formed in a temp.-controlled vat with an extrusion nozzle and a rotary kneading tool, with the resistive couple exerted on the latter and the flow of the extruded dough being monitored. Pref. the resistive couple is monitored via an anmeter inserted in the supply circuit for the electric motor used to rotate the kneading tool.</p>
