PURPOSE:To inexpensively produce R-(+)-malic acid having high optical purity by culturing a microorganism capable of assimilating S-(-)-malic acid and incapable of assimilating R-(+)-malic acid in a culture medium containing racemic malic acid. CONSTITUTION:A microorganism belonging to the genus Acinetobacter, Bacillus, Pseudomonas or Corynebacterium and having ability capable of assimilating S-(-)-malic acid, but incapable of substantially assimilating R-(+)-malic acid is cultured in a culture medium containing racemic malic acid. Then R-(+)-malic acid is isolated and collected from the culture medium. The concentration of racemic malic acid in the culture medium is preferably 1-200g/l and the above- mentioned culture is carried out at pH 2-9 and 20-40 deg.C under aerobic conditions such as shake culture or submerged culture. R-(+)-malic acid having high optical purity can be produced at a low cost by applying the above-mentioned method. |
