1511392 Coatings for sweet foods GENERAL FOODS CORP 14 May 1976 20122/76 Heading A2B A foodstuff, particularly a ready-to-eat cereal is coated with a coating of dextrin or hydrolyzed amylaceous dextrinous solids containing a high intensity sweetener. The sweetener is preferably a methyl ester of L-aspartyl- L-phenylalanine but others may be used. The coating is preferably applied by forming a carrier solution of the dextrin and sweetener and then spraying the solution onto the food such that a portion of the solvent evaporates prior to contacting the surface, so that discrete moieties of dextrin and sweetener are deposited on the surface, whereby a foam structure is gradually built up and finally removing excess solvent to produce a coating having a frosted appearance. A vegetable oil and an emulsifier (or tri-glyceride) may additionally be present. |
