<p>To produce a tea leaf having improved cold- and hot-water extractability, freshly harvested, green tea leaves are used as starting material, which are contacted with tannase under anaerobic conditions for green tea and heat-treated without being fermented. For black tea or oolong tea, after the tannase treatment, the tea is fermented and heat-treated by conventional methods. The heat treatment allows a product to be obtained both from green and fermented tea leaves which, in contrast to similar products of known processes, is both cold- and hot-water extractable.</p> |
