Preservation of slaughtered carcases - by spraying with organic acid, e.g. ascorbic acid, lactic acid or citric acid

Freshly slaughtered carcases are preserved by spraying them with a soln. of an organic acid. Pref. the carcases are sprayed whilst they are still warm and the surface pH of the carcases is lowered to about 4. The carcases are sprayed e.g. with solns. of ascorbic acid, lactic acid or derivs. of this, or citric acid or derivs. of this. Pref. the acid soln. is sterilised before use by passage through a filter. The treated carcases can be exported without deep freezing.
