Lipase is obtained by treating comminuted pancreas tissue with a mixture of 80- 95% by volume (a) halogenated hydrocarbon having a boiling point of 47 DEG - 130 DEG C. and a density greater than 1.3, or (b) hydrocarbon having a boiling point of 47 DEG - 130 DEG C. and a density of from 0.655 to 0.88, and a water immiscible alcohol having 4- 6 carbons.
