The organic nitrite is suitably a C 2-8 alkyl nitrite having a boiling point in the range 30‹ to 120‹C. The organic nitrite is preferably n-butyl nitrite. An ascorbate or isoascorbate may be present in the composition. The composition may additionally contain an edible emulsifier to facilitate the emulsification of the organic nitrite in the pickle solution.
