摘要 The stability of cottage cheese is increased by a novel process where the milk is soured, thickened, and the granular product formed separated by the whey and washed. A stabiliser is then added, the product hermetically sealed in containers and stabilised.The cheese can be stored at ordinary temps, with no cooling, for up to 6 mouths; there is no spoilage or loss in taste.
