PURPOSE:To prepare a heat resistant albumen free form odor by heating an alkaline albumen liquid at a prescribed temperature for a prescribed time and then cooling the liquid, concentrating the resultant polymer-containing liquid with a membrane and then removing hydrogen sulfide produced in heat treatment. CONSTITUTION:Pure water 1/2-3 times by weight is added to an albumen liquid (usually having 10% solid content) which is a raw material to dilute the albumen liquid and pH of the albumen liquid is controlled to alkaline area, preferably pH8-10. Then the albumen liquid is heated at 80-120 deg.C for 30sec-60min and then cooled. An albumen protein is polymerized by the above-mentioned treatment to form a polymer. The above-mentioned albumen liquid is concentrated by a macromolecular membrane used in ultrafiltration method, reverse osmosis method, precise filtration method, etc., and unpleasant odor ingredients mainly consisting of hydrogen sulfide produced in heat treatment are removed to provide the aimed heat resistant albumen. |
