(By 'foaming' is meant the formation of bubbles in the liquid and also the constant breaking of the liquid surface). The liquid setting or hardening agent is preferably a calcium or other alkaline earth salt solution. The process may be directed to the preparation of a simulated berry fruit and the object coated may contain fruit flavour, pulp or pureÚ. The process may be carried out in the apparatus shown in the accompanying drawing wherein objects 1 are dispensed from a foaming nozzle 2 and fall into a hardening liquid 3, which liquid is foamed by bubbles released from holes 5 in tube 4. |
