A large portable cooker has a combustion chamber with a grate on which solid fuel can be burnt. Burners (3) for liquid or gaseous fuel can be placed through the front of the combustion chamber to provide alternative fuel source according to availability. The combustion chamber is surrounded by a water jacket from which heated water circulates to jackets surrounding cooking pans (12a). The circulation of this water is controlled by valves so that the rate of heat transfer to individual pans is easily regulated. This makes it possible to heat food rapidly to bring it to the boil and then reduce the rate of heating keep it simmering without its being necessary to vary the rate of firing.
