Biological substances, such as fish, meat, including offal, eggs and coconut, for use as food or animal feeds, are preserved by providing a concentration of sulphurous acid within the substance of 0.1-3.0% by weight, converting the substance into particles, heating the particles to at least 65‹C. for a sufficient time to volatilize a portion of the sulphurous acid and convert a second portion of the sulphurous acid into sulphate, removing the vapours and gases from the atmosphere surrounding the particles, and drying the particles to a moisture content of less than 10% of the weight of the particles. The sulphurous acid may be added to the biological substance in the form of sulphur dioxide gas or as a sodium bisulphite. The subsequent treatment of the material, especially where the material is meat or fish, is preferably carried out by azeotropic distillation as described in Specification 1,127,329. |
