PURPOSE:To make it possible to efficiently produce isomaltulose without produce monosaccharide as a by-product by converting saccharide by an enzymatic reaction or fermentation method utilizing glucosyltransferase produced by a microorganism belonging to the genus Klebsiella. CONSTITUTION:A bacterial strain of Klebsiella espi No 88 (FERM P-2838) belonging to Klebsiella is cultured in an already-known culture medium containing saccharide as a main carbon source under facultative anaerobic or aerobic conditions. Then after culturing, a bacterium cell is separated from the cultured medium, heated and filtered and subjected to evaporation concentration and then cooled to deposit crystal of isomaltulose. Then the bacterium cell separated from the culture medium or treated product thereof is added into an aqueous medium containing saccharide as a substrate and conversion reaction is carried out by incubating the mixture at about 30-37 deg.C to provide the isomaltulose. The isomaltulose can be separated and purified from the reaction liquid by means of desalt, decoloring, concentration, crystallization, fraction, etc. Thereby isomaltulose can be efficiently mass-produced without producing monosaccharide as by-product. |
