The present invention relates to a method for processing dried pollack. The method for processing dried pollack in accordance with the present invention is to process dried pollack by spraying water on dried pollack and then aging the same at low temperatures and beating the same, and cutting the same open. When a processor sprays water on dried pollack, with a head of whole dried pollack facing up, two-thirds of the time for spraying water is spent on the head and one-third of the time is spent on the body. When the processor beats the dried pollack, the processor holds eyes of the dried pollack and inserts the dried pollack in a beating machine from a tail to the head while turning the same so as to allow the dried pollack to be beaten. The tail is beaten at least twice and an upper side of a point the head and a back meet should be beaten. When the dried pollack is cut, the processor makes cuts around a thick bone passing through the body of the dried pollack and removes the thick bone from the tail to the head by turning a stomach inside out, and trims the inner part of the dried pollack, and then removes small bones. According to the present invention, when a processor processes dried pollack, processing and deboning become easier, so the work efficiency can be increased. |
