PURPOSE:To homogeneously heat a bean jam material in a short time and enable to produce a high quality bean jam is a high yield without scoaching the bean jam material blowing steam upon the bean jam material stirred in a container to heat the material at a prescribed temperature and a subsequently blowing heated air upon the heated material to remove the water. CONSTITUTION:While stirred with a stirring blade 24, a bean jam material received in a pressure cooker 20 is heated with heated, clean steam jetted from a steam-jetting pipe 20 to a prescribed temperature in a short time. Heated, clean air is jetted on the bean jam material heated to the prescribed temperature and stirred from an air-jetting pipe 28 to evaporate water in the heated bean jam material so as to give a desired water content, followed by passing cooled water through a jacket 23 to rapidly cool the jam material to give a desired hardness. When the heat steam is blown upon the bean jam, the container is, if necessary, heated to heat the bean jam, thereby permitting to heat the bean jam material in further high efficiency. |
