1502706 Flavour modifiers WILKINSON SWORD Ltd 2 June 1975 [3 June 1975] 22833/76 Divided out of 1502680 Heading A2B [Also in Divisions C5 and C6] A method of modifying the flavour of flavour-containing ingestible preparations involves incorporating into the preparation a compound, being a compound capable of stimulating the cold receptors of the nervous system of the body when brought into contact therewith, but being incorporated into the preparation in an amount below the threshold of practical physiological cooling activity typically from 0.1 to 100ppm, said compound being a compound of the formula RX where R is a saturated or monoethylenically unsaturated alkyl-substituted bicyclic hydrocarbon radical containing a total of from 8-12 carbon atoms and selected from [3.1.1] bicycloheptanes, [2.2.1] bicycloheptanes and hept - 5 - enes and [2.2.2] bicyclooctanes and oct - 5 - enes containing from 1-3 C 1 -C 5 alkyl substituents; X is a CH 2 OH, COOH, COOR 1 or CONR 2 R 3 group attached to said bicyclic radical at a 2 - position, and where R 1 is a hydroxyalkyl or hydroxyalkoxyalkyl radical of from 2-4 carbon atoms; R 2 , when taken separately, is H or C 1 -C 5 alkyl; R 3 , when taken separately, is H, C 1 -C 5 alkyl, C 1 -C 5 hydroxyalkyl or C 3 -C 6 alkoxycarbonylalkyl with the proviso that when R 1 is H, then R 2 may also be C 3 -C 6 cycloalkyl, phenyl or phenyl containing up to 2 hydroxy, methyl or methoxy substituents; and R 2 and R 3 , when taken together, represent a C 4 -C 5 alkylene group, the carbon atom chain of which may optionally contain an ether oxygen atom, and forming with the nitrogen to which they are attached a piperidino, pyrollidino or morpholino group. Examples 2, 5, 7, 9 and 12 are directed to the incorporation of specified compounds conforming to the general formula given above into the following: infusion of instant lemon tea, chocolate milk drink, blackcurrant jelly, and tomato and oxtail soups. Many other compounds are particularly set forth. |
