<p>Prodn. of ice-cream by homogenising and then deep-freezing the edible mixt. comprises introducing a gas or gas mixt. into the edible mixt. before the homogenisation stage. Pref. the mixt. is then sprayed into the deep-freeze zone by means of a futher gas or gas mixt. esp. at -30 to -100 degrees C. For both stages CO2 andOor N2 may be used for the gas or gas mixtures. Due to the blowing of gas into the initial mixt. a very finely divided micro-crystalline structure is produced, which considerably shortens the subsequent freezing and hardening times. The use of gas additionally to blow the mixt. into the deep-freezing zone prevents the formation of coarser crystals at that stage.</p> |
