The substances may be foodstuffs, notably lipid, protein, nucleoprotein or lipo-protein containing foodstuffs. The superoxide dismutase enzyme may be selected from those extracted from marine bacterial strains, Escherichia coli, fungi or blood, and notably erythrocupreines. The treatment of mushrooms, apples, potatoes and carrots is exemplified. |
