1428898 Auto-oxidation control AGENCE NATIONALE DE VALORISATION DE LA RECHERCHE 76 April 1974 [16 April 1973 10 Aug 1973] 16511/74 Heading A2D In a process for controlling the autooxidation of substances liable to be degraded by an oxidation involving superoxide ions, an amount, effective to control said auto-oxidation of at least one superoxide dismutase enzyme is added to said substances. The substances may be foodstuffs, notably lipid, protein, nucleoprotein or lipo-protein containing foodstuffs. The superoxide dismutase enzyme may be selected from those extracted from marine bacterial strains, Escherichia coli, fungi or blood, and notably erythrocupreines. The treatment of mushrooms, apples, potatoes and carrots is exemplified. |
