<p>A beer wort boiling vessel of rectangular, horizontal cross-section. The vessel is of the type having a sloping base which can be heated to raise the temp. of the vessel's contents. The base of the vessel rises between the vessel sides in the form of a single ridge roof with its apex running parallel to, and pref. centrally between, the two longitudinal sides of the vessel. Pref. each end of the ridge does not reach the end wall of the vessel; instead it is joined to the bottom edge of the end wall by an inclined surface set at a slope which is steeper than the longitudinal sides of the ridge. The side slopes of the ridge are pref. symmetrical about the longitudinal centre-line of the tank. Each side slope pref. has a lower section at 10-20 degrees to the horizontal blending into an upper section at 10-20 degrees to the horizontal. Pref. all round the raised area of the base, a drain gully is formed at the lower edge of the end and side walls. The heated slopes to a central ridge of the base give rise to a convective circulation of the wort which tends to rise like a fountain above the ridge. This produces highly efficient heat transfer, improved coagulation and vaporisation. Additional heating surface is provided by the sloping up to the ridge.</p> |
