<p>A device to split a deep frozen slab of fish fillet into slices or fingers, consists of a set of parallel steel strips of 1/10-2/10 mm. thickness. The strips are kept taut so that they disect the slab when it is moved relative to them. Electric current passes through these strips to heat them to an adjustable temp. This causes less losses of fish fillet material than high-velocity endless saw ribbons or circular saws. The method produces a hardened surface layer on the portions along the cut.</p> |
