Amylase inhibitor from Phaseolus vulgaris - active against amylase from saliva or pancreas, does not inhibit alpha-amylase from e.g. Bacillus subtilis

A new amylase inhibitor (I) of polypeptide character has high activity against amylase from saliva or the pancreas, but does not inhibit alpha-amylase from Bacillus subtilis, Bacillus amyloliquefaciens or Aspergillus oryzae. (I) is obtd. from Phaseolus vulgaris (I) is pref. prepd. by extracting bean-flour (from the seeds or green fruit) with 1.5-7 pts. wt. of 0.001-0.02 N aq. H2SO4, centrifuging, heating the liq. 10-30 min. at 65-80 degrees C, centrifuging again, dialysing and isolating (I) by lyophilisation. (I) reduces starch formation from carbohydrate-rich foodstuffs and can therefore be used in the treatment of adipositas, atherosilerosis, diabetes and prediabetes.
