<p>A cheese-making vat is intended for th prodn. of cheeses, which must be granulated to allow the fermentation process to take place. The vat comprises a fixed vessel and an internal disintegrator system consisting of vertical blades and horizontal blades. The horizontal blades are rotated while the whole system is elevated so as to cut up the entire volume of cheese contained in the vessel. Used in particular for the prodn. of cheeses of the types "Roquefort" and "Bleu d'Avergne". The appts. enables the entire volume of cheese to be cut up in a series of vertical radial planes, flat helical planes extending almost horizontally, and vertical hoop planes.</p> |
