A process for producing a foodstuff mainly consisting of highly functional vegetable protein substantially free of off-flavour components and pigments, which comprises subjecting vegetable protein containing material to alkaline conditions in the presence of an alkali metal halide and separating released pigments and off-flavour components from the protein by ultrafiltration or iso-electric precipitation. |
