A method for making meat sauce using an olive leaf is provided to increase a mineral content of meat and lower cholesterol of the meat by using the olive leaf and a phellinus linteus. A method for making meat sauce using an olive leaf comprises the following steps of: steaming the olive leaf with steam vapor for 30 minutes; mixing the olive leaf and brown sugar to a weight ratio of 95:5; fermenting a mixture in 25-35°C for 3-7 days; drying the fermented mixture to a water content of 5% less; pulverizing the dried olive leaf; drying phellinus linteus to a water content of 5% less and pulverizing the phellinus linteus; mixing the olive leaf and the phellinus linteus to the weight ratio of 80:20; mixing the mixture with drinking water to the weight ratio of 1:2 in 90-100°C for 1-3 hours and extracting the mixture; filtering extract; preparing sauce by mixing olive leaf extract(10%), the drinking water(76.92%), the sugar(1%), and soy sauce(4%) etc; mixing the sauce with the meat to the weight ratio of 70:30, and ripening the meat for 3-48 hours. |
