The present invention relates to a method for manufacturing walnut cake with red ginseng, which contains 5±2.5 wt% of red ginseng in the shell of the walnut cake and gives a person tastes of walnut cake and red ginseng at the same time while staying fresh for a long time by adding red ginseng to a process of manufacturing a premix used in making the walnut cake. Provided is a technique for manufacturing and storing the walnut cake with red ginseng which comprises the following steps: preparing a baking mix for walnut cake and red ginseng powder as raw ingredients of the walnut cake; preparing eggs as an ingredient for the shell of the walnut cake including a process of separating the egg yolk from the white and a process of mixing; preparing a mixed composition (4) by mixing an egg mixture (3) and water used for a process in which milk and water is mixed in the ratio of 1:1±0.5; preparing a premix (5), a composition of the shell containing red ginseng, by putting the mixed composition (4) prepared at the previous step and red ginseng powder per 100 parts by weight of the baking mix for walnut cake, adding egg whites, and kneading the same while spinning at a high speed; and obtaining the walnut cake putting ingredients for stuffing in the premix (5) according to the process of manufacturing the walnut cake and baking the same using a baking machine keeping the temperature range of 190±5°C. |
