Foodstuff flavor and aroma and perfume aroma augmenting compositions containing a quantity of at least one 4- or 5-phenyl-pentenal or a lower alkyl or lower alkylene acetal thereof sufficient to alter the aroma and/or organoleptic characteristics of said compositions, methods for preparing same, foodstuff and perfumed materials containing at least one of said phenyl pentenals or acetals thereof; certain novel 4- and 5-phenyl-pentenals, lower alkyl and lower alkylene acetals thereof, novel processes for producing same, and novel Schiff base intermediates used in producing same.
