The invention is intended to retard the senescence and polyphenol oxidase action in non-climacteric fruits, i.e., retarding the oxidation process in climacteric fruits by a process applied to said fruits, which includes the selection of the fruit that will be classified according to its ripeness degree, starch content and size, amongst other characteristics. The process guarantees a useful life of the fruit of up to 20 days, provided that the fruit is refrigerated at a temperature of 0.1-2.0 °C. |
