PURPOSE:To obtain the subject pickle having excellent touch to teeth and fresh feeling by making notch for compulsorily penetrating sugar component in an epidermis of fruit of young-harvested plum and making as sugar-added pickle in vinegar, sugar-added pickle with salt and other pickle sugar-added and lightly pickled. CONSTITUTION:Green, unripened and woundless plum having about 3cm diameter is well-washed and notches 2 for compulsorily penetrating, sugar that is, cross or transverse straight lines are unobtrusively cut at fruit epidermis part of said plum, then pickled in raw pickling solution containing sugar (e.g. sugar- added vinegar pickling solution) in floated state for about 1 week to afford the objective pickle. |
