Method comprises hydrolysing molasses to glucose and fructose; adding lime to the hydrolysate; sepg. fructose partly and using the remaining liquid as the material for alcoholic fermentation using the yeast of Saccharomyces. Provides a process for prepg. alcohol and fructose inexpensively. Though the purity of molasses is decreased by recovering fructose, the fermentation yield of alcohol is hardly decreased.
