The non-textured protein may be fish or meat paste derived from bonito or mutton scraps, mixed with oil, water, seasoning materials, colouring agents or flavourants. Examples describe the preparation of cooked cubes of simulated meat prepared from fibrous soy protein and (1) ground fish meat and (2) chicken paste. |
