The apparatus is composed of a chest (33) as well as of a leaktight bell (36) with a semi-cylindrical vault (45) and faces (46), which may be closed over moulds which are filled with blended ham and carried by a roller conveyor (35). The edges of the bell are equipped with the seal (52) closing the inner volume hermetically. The lowering of the bell (36) over the chest (33) is damped. Once the apparatus is closed, a vacuum pump is put into operation until the desired vacuum is obtained, and then a circuit commands the automatic re-opening of the bell after a specific period of time. The degassing apparatus operates virtually entirely automatically and can be integrated into a moulding line comprising conveyors for transferring the moulds filled with hams. <IMAGE>
