摘要 1427922 Food additives UNILEVER LTD 1 March 1973 [3 March 1972 24 April 1972] 9976/72 and 18813/72 Heading A2B An edible composition for addition to foods for humans or animals comprises a stabilised additive, for example, a flavour, enzyme, vitamin amino acid or gassing agent, which is polar or water-soluble and hence tends to be leached out during cooking, or is non- polar and volatile and hence difficult to retain. The additive is stabilized by being dispersed in a paste comprising an edible oily material and a finely divided filler consisting of an edible salt of a fatty acid. The paste is prepared in particulate form, preferably as spheres of diameter 0.3 to 5 mms. These may be coated with filler or filler plus oily material. The oily material may be mineral or vegetable waxes, etherified sugars, ester waxes or a silicone oil or grease, but edible triglycerides are preferred. The filler is a water-repellant oil compatible solid material; calcium stearate is preferred but calcium palmitate or oleate or aluminium stearate, palmitate or oleate are satisfactory. The product may be prepared by forming a paste of the components, extruding, dividing into segments which are formed into spheres and coating the spheres with filler at a temperature near to or above the melting point of the fat or oil. The stabilized additives may be incorporated in reformed meats, sausages meat balls, pasta products, animal foods &c. Additive release occurs on cooking or chewing.
