D,L-2-hydroxy-4- methylvaleric acid is useful as a sweetener. It has comparable sweetness to Na cyclamate is not toxic and is heat stable so may be used in cooking. It can be prepd. e.g. by reacting isovaleraldehyde with HCN and hydrolysis of the cyanhydrin with acid. The prod. is reacted with KOH at pH 7 and evapd. or spray-dried to give a salt suitable for use as a sweetener.
