1488282 Artificial honey FUJI OIL CO Ltd 3 Feb 1975 [4 Feb 1974] 4581/75 Heading A2B Artificial honey, or a honey flavouring, is made by heating phenylalanine, xylose and sucrose together in aqueous solution in the presence of a carboxylic acid at 120- 150‹C the phenylalanine : cylose ratio being 1:1 to 1:5 and the xylose concentration being greater than 0.2% by wt. The carboxylic acid may be tartaric, citric, malic, oxalic, succinic, malonic, fumaric, maleic, benzoic and/or phthalic acid. The mixture may be heated for 5 to 30 minutes. The sucrose is partially caramelised. The pH is 5-6. Tyrosine and glycine may be included in the reaction mixture. In an example the product is included in a cake mixture, comprising egg, sucrose and wheat flour. The product may be mixed with a perfume fixative e.g. glycerol or propylene glycol. Vitamins, amino acids and inorganic salts may also be included. |
