(I) is useful as a substitute for methionine in foodstuffs and animal feeds, in which it is pref. used in an amt. of 0.1-1% based on the crude protein. It is sol. in alkaline solns. but insol. in H2O and dil. acid solns., and is thus esp. suitable for use in textured vegetable protein, which is spun from alkaline soln, into an acid bath.
