A method is described for the conservation of products (2) in sealed wrappers. A sealing test is performed using a mass spectrometer on the wrappers previously filled with the products to be conserved. After filling the wrappers and evacuating them again using known techniques, and before sealing them again using known techniques, a very small quantity of rare gas, pref. helium, is injected into each package and these are then placed in a vacuum enclosure (1) where a mass spectrometer sealing test is performed. An inert gas such as nitrogen is injected at the same time as the helium. A snifting valve is used during the sealing test, thus enabling any leakages (10) to be localised.
