alpha , beta -Dihydrocinnamaldehydes are prepared by selective hydrogenation of corresponding cinnamaldehydes in the presence of a palladium catalyst on a support of activated carbon and of an aqueous alkaline solution of an alkali metal compound at a reaction temperature of at least 40 DEG C and a pressure of at least 1 bar. To shorten the reaction time without impairing the yield and the selectivity, the starting mixture of cinnamaldehydes, palladium catalyst on activated carbon support and aqueous alkaline solution of the alkali metal compound is heated to the reaction temperature under a hydrogen atmosphere.
