<p>Processing and deep-cooling tomatoes in natural condition is effected by (i) grading the fruit, washing and drying, (ii) deep-freezing the graded material, quenching by heati-shock and peeling by rubbing the surface and (iii) embedding the whole, peeled fruit in a tomato pulp and deep-freezing fruit and pulp together. The tomatoes can be preserved for a long time without use of additives, using cheap packing materials, pref. of plastic-lined cardboard. Proteins are not degraded on storage. Products are packed in plastic-lined cardboard boxes opt. divided by partitions, e.g. of polyethylene, for storing deep-frozen portions of uniform weight.</p> |
