摘要 1486419 Treating food pieces UNITED BISCUITS (UK) Ltd 6 Nov 1974 [15 Nov 1973] 53093/73 Heading A4D [Also in Division A2] An apparatus for treating food pieces with liquid, particularly for treating food slices with oil prior to frying, comprises elongate level bath 1 for containing the liquid, a weir at one end of the bath arranged to define the level of the liquid in the bath, an endless conveyer belt having an upper run extending along the base of the bath and a lower run extending below the bath, the weir and the belt being relatively positioned so that food pieces travelling along the bath on the upper belt run, in operation of the apparatus, are partially immersed in the liquid, and at least one outlet for directing liquid on to the exposed surfaces of the food pieces while they are on the upper belt run. The stainless steel bath 1 has end portions 4, 5 raised above the bottom 6 of the bath. End portion 4 includes a member 13 having a cut-out portion 14 which acts as a level control or weir for the oil 27 in the bath. A porous endless woven conveyer belt which carries flat pieces 32 of dough passes over the bottom 6 of the bath and the height of cut-out 14 is adjusted so that the level 26 of oil is halfway up the dough pieces. The upper surfaces of the pieces are treated with oil through tubes 18-21 which are slotted or perforated to provide liquid curtains or sprays respectively. The conveyer is held beneath the oil level by guide elements mounted on spindles held in slots 7, 9 etc., and passes over rollers in slots 11 and 12 at the ends of the bath. The bath temperature is set by the temperature of oil issuing from the tubes or the bath may have a separate control.
