Fish filleting machine for fishes with different bone structure comprises a pair of belly filleting blades, a pair of rib blades, and a pair of back filleting blades. In front of the rib blades are a pair of backbone blades which separate the vertebral attachments from the vertebrae of the backbone, leaving the fillets on the spinous processes of the vertebrae. Bell cavity guides which limit the depth of cut sepg. the vertebral attachments may be associated with the backbone blades. The machine allows filleting of fish which have vertebral attachments extending at different angles from their vertebrae, by means of the pair of rib blades which are arranged at a certain angle to each other, with a high yield.
