1486069 Enzyme flavouring compositions BAXTER TRAVENOL LABORATORIES Inc 1 April 1975 [8 April 1974] 13319/75 Heading C3H [Also in Division A2] An enzymatic flavour developing substance comprises a lipolytic enzyme composition having an EA/LA ratio of greater than one and recovered from the fermented growth product of Mucon miehei. The ratio EA/LA connotes esterase to lipase activities. Esterase activity is measured by effect on water-soluble fats i.e. C 4 to C 10 and lipase activity on water-insoluble fats i.e. C 12 to C 22 . Recovery of the enzyme composition from the fermentation wash can be by filtration at pH 4-5, extraction of the filter cake at pH 10-12, acidification of the extract to a pH of about 7 and recovery by fitration, concentration and drying. Examples describe the flavouring of dairy products. |
