Process for modifying, reinforcing or supplementing the flavour or aroma of foodstuffs comprises incorporating a small amt. of a 3-methylpentanoic acid alkyl ester (I) with 1-5C in the alkyl gp. Generally 0.005-2 ppm (I) is added, in pure form or as a soln., with a solid carrier, or in an aroma preparation. (I) are esp. useful in fruit flavourings, e.g. for making strawberry, apricot or raspberry flavour fruit drink concentrates. |
