Installation for the heat treatment of foodstuffs with heated air and water steam, where the hot air or the steam/air mixture are brought to a pre-set treatment temperature inside a heat insulated container by thermostatically controlled heating elements and is then forced by a centrifugal blower in a closed circuit along two air supply channels extending along two opposite sides of the inner treatment chamber and between them along grids fitted to hold vessels. The heating elements are located inside a chamber open towards the suction side of the centrifugal blower but capable of being closed by flaps by alternate control movements against the treatment chamber. A heatable water bath is positioned below the heating elements.
