1412802 Structured food products RALSTON PURINA CO 18 May 1973 [30 May 1972] 23898/73 Heading A2B Structured food products are prepared from unstructured animal proteinaceous material by mixing therewith a heat-settable synthetic protein fibre, and then moulding the mixture. The protein fibre may contain at least 45% by wt. of protein and may be prepared from soya or field beans e.g. by the processes of U.S. Specifications 3662672; 3662671; U.K. Specification 1269769. The fibres may have a length of 0.125-1.0 in and constitute 5- 60% by wt. of the product. The unstructured material may be raw tuna cannery waste, peeled shrimps, mechanically deboned chicken or hake, and constitute 5-90% by wt. of the product. The products may be fish sticks, tuna loin, chicken drum sticks or soup chunks. The product may be frozen during or after moulding, breaded and then heat-set with an internal temp. of 120-250‹F for 3 - 120 mins. The product may contain 6% by wt. of flavourings, spices, vitamins and/or minerals. |
