摘要 <p>Baking prods. can be enriched with proteins coagulated and sepd. from spent water from potato starch mfr. Process is improved in that the coagulated proteins are thoroughly washed; then mixed with a soln. contg. starch or another swelling substance; and dried. The resulting powder can be added to plain flour, and mixed with salt and water to produce a dough, which is expanded with compressed air and baked. Method is esp. suitable for the mfr. of hard, durable baking products enriched with proteins. The washing improves the proteins' compatibility with the flour, whereby the consistency of the product and its taste are improved.</p>
