A milk or cream product with enhanced keeping properties comprises milk (e.g. whole milk or skim milk) or cream mixed with a refractionated low fat milk fraction (e.g. buttermilk), which is the low fat fraction separated from a cow's liquid milk fraction or cream having a fat content of 10-80% by weight. The milk or cream is heat sterilized before mixing or the mixture is heat sterilized. The mixture may be homogenized before or during sterilization. The product may be whippable or in the form of powder. |
