<p>Mixing process for grapes in a wine-making tank is effected by means of ahigh power pump. The grapes soon separate into a lower layer of juice covered by a layer of floating skins. In making red wine the substances contd. in the skins esp. the colouring matter and the tannins, must be extracted as completely as possible. The pump is lowered by the mobile lifting block through a hole in the top of the tank. The pump inlet is situated above the floor while the outlet is connected to an ejector which carries an adjustable yoke with a deflecting cone fixed to its centre. When the pump is started, the juice is sucked into the pump and forced out in a cone-shaped stream against the base of the layer of skins. All the intense agitation and percolation of the skins by the juice is effected without breaking into the CO2 atmos. which surmounts the layer continuous protection from the air is thus assured. As only the liq. passes through the pump, the skins are not ground by passage through the pump or by contact with a bladed or paddle wheel. The layer of marc is not disturbed by the mixing process and seals off the air. The treatment improves and facilities the process and a high quality wine is obtd. having constant properties.</p> |
